The magical drink that has conquered the whole world was discovered quite by accident. The history of “fizzy wine” is more than 320 years old, as legend has it that the first bottle of champagne was created and uncorked by a monk named Dom Perignon back in 1693. Paradoxically, Dom Pérignon fought against malicious bubbles for many years, believing that they spoil the flavor of wine, and as a result became famous, becoming the “father” of champagne. The monk made an invaluable contribution to the development of the culture of making this drink, he developed the method of making white wine from dark berries of grapes, improved the recipe for champagne and introduced the tradition of corking the bottle with a cork oak stopper. Champagne quickly gained popularity in France, becoming the drink of the aristocracy, while Russia was introduced to it by the widow Clicquot, who dared to send a huge batch of filled bottles on a long journey. Today, many countries produce wines with bubbles, but only sparkling wine that uses grapes grown in the rich fields of the French province of Champagne is considered to be real Champagne.
